When, click where and why did you decide to start bartending?

I started at Auberge du Pommier when I was about 20 years old. I was looking to learn another section of the restaurant after being a busboy for a couple of years. I never expected myself to fall I love with it.

What is your favourite cocktail?

The Cosmopolitan.

Shaken or Stirred?


If you could work with any other bartender in the world for one night who would it be?  

Bill Murray. Apparently, he once jumped behind a bar and no matter what people ordered he served them tequila. He and I would do that with Cosmopolitans all night long.

If you could visit any bar in the world where would it be?

Aviary is #1 on my list. I love a place like that, it changes the way you look at what you put in your glass and how it’s presented.

Where are you working now and what is your cocktail style for that bar? 

 I currently work at Soho House and Linwood Essentials. My style is most often twists on classics or influenced by food, I’m always looking for new inspiration.

Who is your mentor, if you have one?

Moses McIntee has been the biggest influence on me. I learned more about great cocktails and service behind the bar from him than anyone. He was a pleasure to work for.
